Life has gotten C-R-A-Z-Y at the Cooper household. I am not sure why it is crazier than usual, but it has been a busy month so far for us. All great, fun things, but WHOA! Usually January seems to be a bit of breather, but there is no rest for the weary at our home. When life gets crazy, I always turn to fast, easy, healthy meals for my family. And it really helps when the meals are LOVED by my crew, too. This “it really only takes 30 minutes to make” fabulous recipe for “Gluten Free Impossibly Easy Breakfast Bake” has become a staple in our home and we go crazy, because we eat this for breakfast AND DINNER! I mean, that is why we are called the “Wild Coopers”, right… wait… am I the only one who calls us that?
As you know, I have been gluten free for a while now and I love using the Bisquick Gluten Free pancake mix in this recipe. You can use regular Bisquick, if you so chose. (My family didn’t even notice the difference when I used the gluten free mix and I didn’t even tell them – see, told you – WILD!) 🙂
You can add peppers and onions, but we leave them out of our recipe, no need to bog down all the pancake mix, hashbrowns, turkey sausage and eggs with veggies! 🙂 Seriously, though, we love this recipe!
