Summer is officially here! ☀️ Sun, fun and easy schedules. And peaches. 🍑 Fresh peaches are one of my favorite things so I never miss the opportunity to bake up a fresh peach cobbler.

It’s especially fun because my daughter gets in the kitchen with me. If you live local, I can’t recommend Sara’s Fresh Market enough, delicious fresh produce and some delicious homemade ice cream as a treat while you shop!! ( I never turn down a chance to get ice cream!!🍦 So let’s kick off summer and get this peach cobbler started.

Ingredients for Topping

Bisquick Healthy Request Mix
2 1/4 cup Bisquick Mix
3 tablespoons sugar
3 tablespoons butter (melted)
2/3 cup milk

Mix all the ingredients together. Set aside.

Ingredients for Cobbler

6 cup peeled, sliced peaches
1/4 – 1 cup sugar, depending on how sweet you prefer your dessert.  (I always use 1 cup)
1 tablespoon white flour
1/4 teaspoon cinnamon (I used a bit more on accident and it was delicious!)
1 tablespoon lemon juice

Before we go any further, you have to check out the easiest was to peel peaches. Definitely the hardest part of putting this recipe together, but Tastes Better From Scratch has an amazing trick! Gently drop a few peaches at a time into boiling hot water. Let them sit for 30 seconds and then move them to an ice-water bath. It’s that simple and it works!

How to Make Peach Cobbler

Preheat oven to 375 degrees. Mix peaches, sugar, flour, cinnamon and lemon juice. Pour fruit into a greased 9 x 13 pan.

Roll out biscuit dough and lay on top of peaches.

Roll out biscuit dough and lay on top of peaches.

Sprinkle sugar on top of dough. Bake for 30 – 40 minutes.
