Are you ready to celebrate the 4th of July? We are in the Cooper house and can’t wait to celebrate with this delicious dessert, Gluten-Free Pound Cake with berries, whipped cream and yogurt. There really is nothing more sweet to me than a red, white and blue dessert on our American holidays and this year, 4th of July is really no exception.
I decided to test out a recipe with Brenna and her friend Madi for a gluten-free pound cake. I bought some berries, some whipped cream and some yogurt, all the ingredients needed for the gluten-free pound cake and we were off to the kitchen. As I have transitioned to a gluten-free lifestyle, due to swollen joints and just not feeling well after eating gluten, I have found that there is a lot of testing into what gluten-free recipes work and what pre-made products are good. I mean this is kind of like any other thing in life, but the gluten-free world has fewer options and sometimes products and recipes can be too bland or mealy tasting. Well, look no further for a tasty treat for this summer than what is listed below.
I have to say that cooking with Brenna is one of my favorite activities. I like watching her measure and taste and mix and enjoy cooking as much as I do; it is one of my favorite memories growing up with my Mom and Nana. And to add sweet Madi into the mix was a cherry on top of this already fun moment! Brenna, Madi and I had a blast putting this recipe together.
And OH MY GOODNESS!! How tasty!! I would recommend getting your workout done before you eat this (or plan for a workout after – see butter and milk contents below), but it was worth every calorie consumed. When ate it up and brought some down to a neighbor friend who is also gluten-free. I have to say that I splurged and added both yogurt and whip cream to my dessert. Yummy!!
