Well, it wouldn’t be Fall if I didn’t post a few recipes that involve Pumpkin, and this one is STILL a favorite in the Cooper household!


So, the cat is out of the bag… I LOVE PUMPKIN! For those of you who know me, you know that this is not a news flash. But, it is now, when the weather starts to get cooler and Fall officially hits the calendar and pumpkins start popping up on front door steps along side beautiful mums that my body craves pumpkin flavored treats. So, for this Friday’s Favorite FALL Things edition, I would like to share with you a family favorite pumpkin recipe. These pumpkin chocolate chip muffins are so tasty that they become a staple breakfast item in our house. If you were to be here any random school day in the fall, you would see my husband leave the house with a kiss and two muffins; you would see my children eating these muffins before school as well and if I really had my act together you might find these muffins in our freezer, because I doubled the batch (reheated in the microwave for 1 minute on high makes them super yummy and not frozen)!

Here is the recipe:

Ingredients:
1 cup sugar
1/4 vegetable oil
2 eggs
3/4 cup canned pumpkin
1/4 cup water
1 1/2 cups flour
3/4 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon ground cloves
1/2 teaspoon ground cinnamon
1/2 teaspoon salt
1/4 teaspoon nutmeg
And I eyeball the chocolate chips- 3/4 cup

Directions:
1- Preheat oven to 400 degrees. Use muffin paper liners and put in muffin pan.
2- Mix sugar, oil and eggs. Add pumpkin and water. In separate bowl mix together flour, baking soda, baking powder , spices and salt. Add wet mixture and stir. Then add chocolate chips.
3. Fill muffin cups 2/3 full of batter. Bake for 20-25minutes.
4.- Eat muffins and share them with your family, because they don’t like it if you eat them all!!! 🙂
