Yum, yum and more yum for this newborn photographer! My sweet Brenna wanted to do some baking recently and she didn’t have to twist my arm hard to make these delicious Cinnamon Puff Muffins.

Cinnamon Puffs
Makes 12 Large Muffins ( it actually made 16 for me )

Ingredients:
3 cups all purpose flour ( I used gluten free flour)
1 cup sugar
2 1/2 teaspoons baking powder
1 1/4 teaspoons nutmeg
3/4 teaspoon salt
2 eggs
1 1/4 cups milk
5 1/2 tablespoons butter , melted

Topping
1/4 cup sugar
1/2 teaspoon ground cinnamon
4 tablespoons butter melted

Preheat oven to 350 degrees

For the muffins:
In a mixing bowl, whisk together the flour, 1 cup sugar, baking powder, nutmeg, and salt. Make a well in the center of dry ingredients. In another bowl, beat the egg slightly, then add the mil and melted butter. Add the wet mixture to the well in the flour mixture. Stir just until evenly moistened( the batter may be lumpy). Lightly grease muffin cups. Fill cups about three quarters full. Bake for 20-25 minutes or until golden brown.

Topping:
While the muffins are baking, combine sugar and cinnamon in a small shallow bowl until evenly blended. When muffins come out of oven, let them cool just enough so that you can pick them up. Immediately dip the hot muffin tops in the melted butter, then into the cinnamon sugar mixture until coated. Serve warm.
