Last week, I featured some of my favorite make ahead dinners and this week, I am featuring my favorite make ahead breakfasts for those school mornings that could use some extra love. Here are just a few of my favorites. I really love knowing that I am nourishing my family from the inside out every day.

Egg Sausage Sandwiches
Ingredients:
English muffins
8 eggs
1 cup milk
Salt/ pepper
Slices of cheddar cheese
Jimmy dean turkey sausage pattie
Directions:
1-Crack eggs and whisk and add 1 cup milk. Pour into 13×9 greased pan and bake for 30-40 mins at 350 degrees.
2- Bake English muffins in toaster.
3- When eggs have cooked , take out of oven and use a glass as your cutter to cut out your circular eggs for sandwiches.
4- Assemble sandwiches with 1/2 English muffin , egg, slice of cheese and sausage patty and then others 1/2 English muffin. Wrap sandwiches in tinfoil. Place all in a freezer bag.
5- To cook, take 1 sandwich out and take out of tinfoil. Wrap sandwich in a paper towel and microwave for 1 min and then an additional 30 secs. Test to make sure it is warm enough. Eat and enjoy!
Oatmeal Chocolate Chip Muffins
Ingredients:
1 cup quick cooking oats
2 cups buttermilk
1/2 cup brown sugar
4 tblspns melted butter
1 large egg
1 tblspn baking powder
3/4 tsp baking soda
1/4 tsp salt
1 1/2 cups flour ( we used gluten free- Bobs Red Mill)
1 1/2 cups chocolate chips
Directions:
1- Combine buttermilk and oats and let sit overnight in fridge.
2- Combine all ingredients except flour and mix thoroughly. Then add slowly the flour. Add chocolate chips at end .
3- Fill muffin cups to 3/4 full.
4- Sprinkle with sugar topper
– Bake at 425 degrees for 20mins.
