I know, I know…. you might be tired of hearing about my love of muffins, but October CAN NOT roll by without a reboot of one of my MOST FAVORITE recipes – Pumpkin Chocolate Chip Muffins.
I mean, what is not to like?? Pumpkin, Chocolate Chips, Muffins (you know… the breakfast word for cupcake, right?)
Needless to say, this is one of the best recipes to make during the month of October ( or anytime during the year!). These little beauties are also amazing reheated if you freeze them. Reheat in the microwave for 1 minute on high makes them super yummy and not frozen)! Also, I sprinkle a little sanding sugar on them, which adds a sweet treat to the muffins!
Here is the recipe:
Ingredients:
1 cup sugar
1/4 vegetable oil
2 eggs
3/4 cup canned pumpkin
1/4 cup water
1 1/2 cups flour
3/4 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon ground cloves
1/2 teaspoon ground cinnamon
1/2 teaspoon salt
1/4 teaspoon nutmeg
And I eyeball the chocolate chips- 3/4 cup
Directions:
1- Preheat oven to 400 degrees. Use muffin paper liners and put in muffin pan.
2- Mix sugar, oil and eggs. Add pumpkin and water. In separate bowl mix together flour, baking soda, baking powder , spices and salt. Add wet mixture and stir. Then add chocolate chips.
3. Fill muffin cups 2/3 full of batter. Bake for 20-25minutes.
4.- Eat muffins and share them with your family, because they don’t like it if you eat them all!!! 🙂
