Do your children like vegetables? Mine are hit or miss. There are definitely veggies they gravitate toward, but how many carrots can one child eat? I love to hide veggies in things that I know my children will eat. Say hello to zucchini muffins!! These little gems are super tasty and have a hidden weapon with zucchini!
While they might not be as healthy as eating carrots and hummus, these little beauties are delicious on the go as a breakfast treat or a snack and who doesn’t love a homemade goodie!?! My sweet little mini-me, Brenna and I whipped these up and added chocolate chips, too. (I have been very honest about this… the zucchini is the healthy part.)

Ingredients:
3 eggs
2 cups of sugar
1 cup oil
1 teaspoon vanilla extract
8 oz cream cheese
2 cups flour
1 tsp baking soda
1 tsp baking powder
1 tsp cinnamon
1 tsp salt
1/2 tsp nutmeg
2 cups shredded zucchini
Directions:
1- heat oven to 350 degrees.
2-line muffin tin with muffin holders or spray with Pam spray.
3- Beat eggs, sugar, oil and vanilla.
4- Beat in cream cheese.
5- In another bowl whisk flour, baking soda, baking powder, cinnamon, salt, and nutmeg. Add slowly to egg mixture.
6- Fold in zuchinni. Pour into muffin cups 3/4 full.
7- Bake 20mins.
8- Allow to cook and enjoy! 😄
