Do your children like vegetables? Mine are hit or miss. There are definitely veggies they gravitate toward, but how many carrots can one child eat? I love to hide veggies in things that I know my children will eat. Say hello to zucchini muffins!! These little gems are super tasty and have a hidden weapon with zucchini!
While they might not be as healthy as eating carrots and hummus, these little beauties are delicious on the go as a breakfast treat or a snack and who doesn’t love a homemade goodie!?! My sweet little mini-me, Brenna and I whipped these up and added chocolate chips, too. (I have been very honest about this… the zucchini is the healthy part.)
This time of the year, gardens are winding down with veggies and there is always zucchini to share and consume! What is your favorite way to sneak in veggies to your life? Leave a comment on my Facebook page under this post!!
