So… one might say that I have an addiction… an addiction to anything that is Pumpkin-flavored. I mean, seriously, does anyone else have a Pumpkin Spice Latte budget for their family? Anyone?? I am seriously considering it for next year. That is totally normal, right? I consume so much pumpkin-flavored things this time of year I don’t even know what to do with myself.
I think I might have also involved my children in this obsession because I think we might make Pumpkin Muffins *don’t you worry, the recipe with follow below* EVERY.SINGLE.WEEK in the Fall. Is that too much? 🙂 So, I couldn’t keep this secret, delicious, beyond yummy, fabulous recipe to myself anymore and I had to share it with you, my loyal Friday’s Favorite Things Mary Beth’s Photography readers. Pumpkin on, my friends… Pumpkin on!!!! 🙂 And, you know, if you happen to make these over the next few weeks, my studio is right around the corner!!! 🙂
Pumpkin Chocolate Chip Muffins
Ingredients:
3/4 cup white sugar
1/4 cup vegetable oil
2 eggs
3/4 cup canned pumpkin
1/4 cup water
1 1/2 cups all purpose flour (I use Gluten-free flour. I like Bisquick or Glutino )
3/4 tsp baking powder
1/2 tsp baking soda
1/4 tsp ground cloves
1/2 tsp ground cinnamon
1/4 tsp salt
1/4 tsp ground nutmeg
1/2 cup semisweet chocolate chips
Preheat oven to 400 degrees F. Grease and flour muffin pan or use paper liners.
Mix sugar, oil and eggs. Add pumpkin and water. In separate bowl mix together the baking flour, baking soda, baking powder, spices and salt. Add wet mixture and stir in chocolate chips.
Fill muffin cups 2/3 full with batter. Bake in preheated oven for 20-25 minutes.
