Fall and breakfast are a perfect match. So this recipe for pumpkin pie french toast is perfect. It’s great for a slow, cozy, eating in your pajamas kind of morning. Let’s get to the good stuff! 🍁

Ingredients:
4 large eggs
1 6 tb whole milk
3/4 cup canned pumpkin
2 tsp pumpkin pie spice (pro tip – we didn’t have any of this on hand so we made our own out of different spices)
1 tsp vanilla extract
1/4 tsp kosher salt
1 loaf brioche bread, cut into 1 inch thick slices (we bought pre-sliced bread)
6 tbsp unsalted butter
maple syrup for serving
powdered sugar for serving

In a large bowl whisk together eggs, milk, pumpkin, pumpkin pie spice, vanilla and salt.

Dip brioche slices, one at a time, into the egg mixture, allowing each slice of bread to soak for at least 15 seconds.

Melt 1 1/2 tbsp butter in a large skillet over medium heat. Working in batches, add soaked brioche slices to the skillet. Cook until evenly golden brown, about 2-3 minutes on each side. Repeat by melting more butter and cooking the remaining bread.

Serve immediately with sifting powder sugar on top of french toast and add syrup.
