Three words – Pumpkin Spice Pancakes. It is what is for breakfast this weekend (or dinner – no judgement). Your family will thank you for this super yummy surprise!

I found this delicious recipe and just had to try it. Truth be told, we at the Cooper household sometimes eat breakfast for dinner and this recipe was a dinner for us one night. The pancakes WERE DELICIOUS and SO easy to make – so easy!
Pumpkin Spice Pancakes
1 1/4 cups flour
2 Tbspn sugar
2 1/4 tsp baking powder
1/2 tsp cinnamon
1/2 tsp ginger
1/2 tsp salt
1/8 tsp nutmeg
1 pinch ground cloves
1 cup milk
1/4 cup and 2 Tbsp canned
pumpkin
2 Tbspn canola oil ( I used Olive Oil)
1 egg
Butter for skillet
Maple syrup for serving
Directions:
1- In a large bowl whisk together flour, sugar, baking powder, cinnamon, ginger, salt , nutmeg, and cloves.
2- In a small bowl whisk together milk, pumpkin, oil, and egg. Gently fold moist mixture with dry until mixed.
3- Melt butter on skillet and laddle batter onto it and cook pancakes. About 3 minutes per side. Drizzle with maple syrup and enjoy!!
